Healthy Yet Very Edible Banana Chocolate Chip Muffin Recipe!
Tired of healthy recipes that taste like bathroom cleaner? Yeah, me too. This banana chocolate chip muffin is so delicious that you won’t believe it’s made from mostly healthy ingredients. I made this today and my mom and dad loved it. Plus it doesn’t have obscure ingredients. Yay :D Yields 12 muffins at 100 calories each.
Ingredients3 small ripe bananas, mashed1 egg, beaten 2 tablespoons of greek yogurt1/4 cup sugar (you can use less if you’re not a sweet tooth OR substitute for a low-calorie sweetener)1/3 cup applesauce1/4 teaspoon salt1/2 teaspoon baking soda2/3 cup white flour2/3 cup whole grain flour1 teaspoon cinnamon (optional)3 tablespoons chocolate chips (try dark chocolate if you can) 
Directions1. Preheat oven to 350 degrees.2. In a large mixing bowl, blend together sugar and greek yogurt until smooth. Add the applesauce and egg, and blend again. Finally, add in the mashed bananas. Blend away!3. In another bowl, mix together white flour, whole grain flour, salt, baking soda, and cinnamon.4. Blend the flour mixture into the banana mixture one half cup at a time. Make sure to blend thoroughly.5. Add in the chocolate chips6. Spoon the batter into 12 muffin tins and bake for 20 minutes. They’re done when you can poke them with a toothpick and nothing sticks on!

Cauliflower Pizza Bites 
Prep time: 10 Minutes - Cook time: 25-30 Minutes. Yield: Makes 24 Cauliflower Pizza Bites
Ingredients:
2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
1/4 Cup Egg Whites
1 Cup 1% Cottage Cheese (drained)
1 Tsp Oregano
2 Tsp Parsley
1/4 Tsp Garlic Powder
1 Tbsp Coconut Oil (Optional)
1-2 Tbsp Frank’s Hot Sauce (Optional)
Directions:
Pre-heat your oven to 450 F.
Using a healthy cooking oil spray your mini muffin tin.
In a hot frying stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a bowl and let cool.
Place all other ingredients the food processor and blend until smooth.
In a bowl combine both the “cauliflower rice” and blended ingredients. Mix completely.
Evenly spoon mixture into your muffin tin molds. Press pizza dough down evenly and firmly (*The pressing down firmly is very important to make sure these stick together).
Place in your oven and bake for 25-30 minutes.
Remove the pizza bites from the oven and let set until cool (This is also very important – let these pizza bites set in their pan for 5 – 10 minutes before removing – If you take them out while they are too hot they will break).
Once cool remove from muffin tin (either by tipping them out OR by running a thin knife down along the side and popping them out).
Use organic, natural pizza or pasta sauce for dipping (or make your own sauce-Simple Marinara Sauce link).

1 cup old-fashioned rolled oats
2 teaspoons baking powder
1 teaspoon ground cinnamon

1½ cups Driscoll’s Blueberries
1. Preheat the oven to 375°F. Lightly oil or coat a 9 x 5-inch loaf pan with nonstick cooking spray and dust lightly with flour.
2. Whisk the buttermilk, eggs, banana, sugar and oil in a large bowl until well blended. Whisk together the flour, oats, baking powder, cinnamon, salt and baking soda in a separate bowl. Stir the flour mixture into buttermilk mixture, mixing just until combined. Gently fold in the blueberries. Pour the batter into the prepared loaf pan.
3. Bake about 1 hour, until browned and a toothpick inserted in center comes out clean. If the top gets too brown before it is done, cover loosely with aluminum foil. Cool in the pan 15 minutes. Remove from the pan and cool completely on a wire rack before slicing.

Home made granola bars!!! Super yummy, healthy, and SO FILLING!
-1 1/2 cup rolled oats
-1 cup dried fruit (I used raisins)
-1 cup nuts (I used almonds)
-1/2 cup brown sugar
-1/2 cup honey

All you have to do is heat up the honey for about 20 seconds, pour everything into a bowl and mix well. Heat your oven to 350 degrees and bake for 10-20 mins! (The longer it’s in, the crispier and crunchier it is) MAKE SURE YOU LET IT COOL BEFORE TAKING THEM OUT OF THE PAN OR CUTTING THEM! They will crumble if you don’t.

Okay If your like me and get “Chocolate is yummy and delicious and I want it now!” kind of craving, then I completely suggest making these bars. They’re absolutely delicious and aren’t a punch in face to your lovely clean eating ways.

— 1 cup pitted dates

— 1/2 cup almonds, unsalted

— 1/4 cup walnuts, unsalted

— 1/4 cup unsweetened cocoa powder

— 2 ripe bananas

— 4 tbsp natural nut butter (I like almond for this recipe!)

— 1/4 cup more unsweetened cocoa powder

— 4 tbsp honey or agave

Put dates in a bowl of warm water and allow to soak for 30 minutes, then drain. Mix dates, almonds, walnuts, and 1/4 cup cocoa powder in a food processor until well blended. Spread mixture in a 9×5 baking pan (or an 8×8 is okay if you like them really thick) until evenly distributed, and press down gently with a spoon. Then, mix together bananas, nut butter, honey/agave, and the other 1/4 cup cocoa powder in the food processor until well blended. Spread this mixture over bottom layer until evenly distributed. Place in freezer for AT LEAST 30 minutes. Cut and enjoy the deliciousness! Re-freeze whatever you don’t eat :D
